So earlier this year on a group ski trip, a friend of mine taught me how to crack eggs with one hand while we made breakfast for the group. This resulted in a kitchen victory dance between us that apparently sounded like an elephant stampede to everyone in the bedrooms on the floor below us. This has nothing to do with anything, other than the fact that I cracked eggs with one hand for this recipe, and then carried on the tradition of the victory dance…
This is a deliciously chocolate twist on an old favorite! You can use your choice of chocolate for this – I chose to use the Enjoy Life chocolate chips. They are dairy, soy and nut free, so they’re great for anyone with allergies. You could also use 4 oz. of dark chocolate, or regular chocolate chips instead. Enjoy!
Paleo Double Chocolate Banana Bread
- 4-5 bananas mashed
- 4 eggs room temperature
- ½ cup almond butter
- 1/4 cup coconut oil melted
- 1 tsp vanilla extract
- 1/2 cup coconut flour packed
- 1/2 cup cocoa powder
- 1 tsp baking soda
- 1 tsp baking powder
- 1/4 tsp sea salt
- 1/3 cup Enjoy Life chocolate chips or regular
Grease one 9"x5" loaf pan and preheat the oven to 350 degrees F.
In a large bowl or mixer, combine the mashed bananas, eggs, coconut oil, vanilla extract and nut butter until fully combined.
Add the coconut flour, cocoa powder, baking soda, baking powder, and sea salt to the wet ingredients and mix well. Fold in the chocolate chunks.
Pour the batter into the prepared pan and spread it evenly.
Bake in the preheated oven for 50-60 minutes. A toothpick inserted into the center should come out clean.
Remove from oven and allow to cool on a wire rack for about ½ hour. Flip out onto a cooling rack to finish cooling.
