Watermelon Jalapeño Refresher

If fresh watermelon doesn’t make you feel like summer is on it’s way, I don’t know what else will! Except maybe sunshine, the smell of fresh cut grass, flip flops… okay maybe that was a bad example.  Anywho… this refreshing drink has that “Sweet ‘n’ Spicy thing going on, and I’m a big fan! The nice part about this is that since you’re making the jalapeño simple syrup (it’s so easy, I promise!), you control the heat. So if you’re not big on spicy, but still want the flavor, you can easily make that happen!

Watermelon Jalapeño Refresher

  • 4 cups seedless watermelon cut into cubes
  • 1 cup coconut water
  • 1/4 – 1/2 cup jalapeño simple syrup recipe below
  • ice
  • lime & mint for serving optional

Simple Syrup Ingredients:

  • 1 cup water
  • 1/2 cup coconut sugar
  • 1-2 jalapeños halved lengthwise


  1. Start by making the simple syrup. Combine sugar and water in a small saucepan and heat to a simmer, stirring or swirling until sugar is dissolved.
  2. Add halved jalapeños and simmer, covered, for an additional 5 mins.
  3. Remove from heat and allow jalapeños to steep in syrup until cooled, about 10 mins.
  4. Remove peppers before using syrup.
  5. Add watermelon, coconut water and simple syrup (start with 1/4 cup) to a blender and blend until very smooth and frothy, about 30 seconds. Taste for spice and add more syrup, if necessary. Drink should be frothy. Serve immediately. Enjoy!
