I’ve been on a bit of a chickpea kick lately (or garbanzo bean, if you prefer). I’ve used them in recipes before and definitely hummus, but I’ve really been enjoying them as more of a main ingredient. If you’re looking for a healthy, savory snack, these herb-roasted chickpeas are awesome. They are also very travel-friendly, so if you’re heading out on a trip, throw these in your carry-on!
Herb Roasted Chickpeas
- 1 can chickpeas drained and rinsed
- 2 Tbsp grapeseed oil
- 1 tsp crushed rosemary
- 1 tsp dried thyme
- 1 tsp dried oregano
- ½ tsp onion powder
- ½ tsp garlic powder
- Salt and pepper to taste
Preheat oven to 400º F and prepare a baking sheet.
Dry the drained/rinsed chickpeas with a paper towel sheets and transfer to a large mixing bowl.
Add remaining ingredients and stir until combined. Transfer chickpeas to baking sheet and roast 20 minutes or until golden and crispy. Enjoy immediately or store in an airtight container for up to a week.
