The inspiration for this one came from my best friend’s husband. When we do dinners together, we usually put him in charge of the protein while we take care of the rest of the meal. He knocked it out of the park with this one and I decided to create my own version of it!
I found these Truffle Marcona Almonds at Trader Joe’s and I love them! They have a great flavor that really make this dish.
Truffle Almond Crusted Salmon with Creamy Dijon Horseradish
- 2 salmon fillets
- 2 Tbsp Paleo Mayonnaise
- 1 Tbsp Raw Horseradish
- 1 Tbsp Dijon Mustard
- 1/4 cup truffle marcona almonds Trader Joe's
Preheat oven to 400 degrees.
Pat the salmon dry and sprinkle with salt and pepper.
In a small bowl, combine the mayonnaise, horseradish and dijon mustard. Put the truffle almonds into a ziploc bag and crunch them up using a rolling pin.
Place the salmon in a baking dish and coat the top of the fillets with the horseradish/dijon sauce. You may have extra, which you can use as a dipping sauce with your salmon, if you like sauce the way I do.
Sprinkle the crushed up almonds over top of the sauce to create a "crust".
Bake in the oven for 15-20 minutes, depending on how well done you like your salmon.
