Since I do so much cooking and blogging, often my friends will hear me say something like: “Do you want to come over and hang out? I’m cooking for the blog, so I’ll make you dinner, but I have to photograph it first!” My friends really don’t seem to mind being cooked for, which works out well for all of us! This recipe, especially, was worth waiting for! For such a simple and easy meal, it is PACKED with flavor.
Strawberry Basil Chicken
- 3-4 chicken breasts
- 1-2 Tbsp coconut oil
- 3 garlic cloves crushed or diced small
- 2 cups fresh strawberries diced
- 1 cup chopped fresh basil
- 1/4 cup balsamic vinegar + 2 Tbsp
Preheat oven to 375 degrees.
In a small saucepan, bring the 1/4 cup balsamic vinegar to a boil. Reduce to low-medium heat and let the vinegar reduce until it thickens up. Remove from heat and set aside. Allow to cool.
Pat chicken dry and season with salt and pepper.
Grease a baking dish with the coconut oil and add your chicken breasts. I ended up slicing my chicken breasts in half lenthwise, as they were pretty thick.
Add the crushed garlic to the top of the chicken breasts.
Bake for 15 minutes.
After 15 minutes, pour the remaining 2 Tbsp of the balsamic vinegar over the chicken. Bake an additional 10 minutes, or until cooked through.
While the chicken is baking, toss the strawberries, basil and the cooled balsamic reduction in a bowl.
Plate your chicken breast and top with the strawberry basil salad and serve!
