Keto Bagels

For anyone who might be trying keto, I don’t know about you, but one of my favorite things is being able to have dairy. I try to eat it in small amounts, but it is wonderful having cheese again. One of my favorite discoveries has been “Fathead” dough – essentially dough made with cheese and almond flour. Skeptical? I totally get it. But it is delicious, and if you’re following the keto lifestyle, it can be a wonderful addition.

I woke up this past Saturday and had a crazy craving for a bagel. I immediately made coffee and went to work on whipping up these keto bagels. They turned out amazing, and I even made breakfast sandwiches out of them, which was such a treat.

Ingredients

Dough

  • 3 cups shredded mozzarella
  • 1.5 cups almond flour
  • 2 tsp ground flax seed
  • 4 Tbsp cream cheese
  • 2 eggs

ToppingsĀ (Optional - choose whatever you like!)

  • Sesame seeds
  • Poppy seeds
  • Onion Powder
  • Garlic Powder
  • Everything Bagel seasoning from Trader Joe's

Instructions

  1. Preheat oven to 400Ā° and grease a baking sheet with coconut oil.

  2. In a bowl mix the almond flour, ground flax seed, and eggs until combined.

  3. Place mozzarella and cream cheese in a microwave safe bowl, and melt in 30 second increments, until the cheese is melted.

  4. Once the cheese is melted, combine with the other mixture. Knead until thoroughly combined. You will most likely want to use a mixer - this can get tough to mix after a bit. 

  5. Roll the dough into log shapes and form a circle with them on the baking sheet. Sprinkle with your choice of toppings.

  6. Bake for 18 minutes.
